The three month wait for n/naka finally ended yesterday night, and it was definitely one of my greatest foodie experiences that I have ever had.
For those of you who don't know what n/naka is, it's a Japanese restaurant that serves modern kaiseki. If you were a fan of the documentary, Jiro Dreams of Sushi, you'll love the new Netflix series, Chef's Table, which features n/naka's chef: Niki Nakayama (same director too!).
This meal isn't just a delicious meal, but it is more of an "experience". The 13 course meal lasted 3 hours. The service is out of this world. The chef keeps notes on the diners and caters to each person and their tastes/dietary preferences. Every course has been meticulously planned and executed. At the end of the dinner, she takes the time to introduce herself and ensure the diners really enjoyed their time.
The modern kaiseki consists of 13 courses. I can't remember all the names, so forgive me if I'm wrong. Just enjoy the food porn :)
Fried Crispy Wonton Stuffed with Shrimp, Kabocha, Yuzu Fresh, Caviar with Chilled Kabocha Soup
Grilled Squid Stuffed with Blue Crab, Squid Ink Sauce, Fried Renkon Lotus Root with Lobster Blackcod Marinated Miso, Jelly Fish Sashimi with Ginger
This part was pretty cool. You take the quail egg yolk (inside the egg on the right), and you drop it on the black squiggly lines (squid ink). Combine and mix, and that becomes your dipping sauce for the grilled squid.
Kanpachi, Bell Pepper Jelly, Jalapeno Jelly, Avocado Chive Sauce
(the particular picture shown below was the non-dairy version, which substituted the avocado chive sauce with avocado slices - they're so considerate!)

Super cool. You take the little cap on the top of the pot and pour yourself corn soup. Then you open the pot and find snow crab meat inside!

The wagyu beef was served on a sizzling hot rock. It literally melted in your mouth. Melted.
Maguro, Japanese Cucumber, Wakame, Yuzu Miso, Paired with Yuzu Omoi Sake
The sake tasted like a really nice sweet juice. You wouldn't even know it had alcohol in it if the servers didn't tell you.
